Extra Easy Gluten-Free Classic Pizzelle Cookies

No need to forgo this favorite Italian cookie if you're gluten-free (or dairy-free for that matter).

These gluten-free pizzelle cookies are light and delicious! The only challenge is trying to limit how many you eat. :)


Gluten-Free Classic Pizzelles


Ingredients:


6 eggs


3 1/2 cups gluten-free flour (might need a little more if using orange juice in recipe (Bob's Red Mill Gluten-Free 1 to 1 Baking Flour is a favorite)


1 1/2 cups sugar


2 Tablespoons Anise/Vanilla (1 tablespoon of each) (LorAnn brand is natural and gluten-free)



4 teaspoons gluten-free baking powder


1/2 cup orange juice (optional)



Instructions:


So simple! Melt the butter, toss in the other liquids, flour and baking powder. Mix thoroughly into a stiff batter. Chill overnight and start baking the next day. Keeps well in refrigerator for a few days or more if making separate batches.
