Gluten-Free Banana Muffins
Ingredients:
3 large well-ripened bananas
3/4 cup sugar (or 1/2 cup honey)
1 egg (or egg replacement)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups gluten-free flour blend
1/3 cup melted butter (can use dairy-free) or safflower oil
Instructions:
1. Preheat oven to 375 degrees
2. Mash bananas
3. Add sugar and slightly beaten egg
4. Add butter or oil
5. Add dry ingredients and mix by hand just until combined
6. Bake for 15-20 minutes, depending on your oven,
7. Done when toothpick comes out clean
