Fun with the Kids: No-Bake Christmas Cookie Recipes (Gluten-free, Dairy Free Easily Adaptable)

These two simple no-bake Christmas cookie recipes are easily adapted to be both gluten-free and dairy-free. The tasty treats are just perfect for no-baking, cookie-making fun with your kids in the kitchen this holiday season!



Simple Fun No-Bake Christmas Cookie Recipes to Make with the Kids

No Bake Christmas Candy Cane Sugar Cookie Bites



Ingredients:


1 cup salted butter or dairy-free buttery spread (I use Earth Balance Vegan Buttery Sticks) softened to room temperature but not melted


1 1/2 cups packed light brown sugar


1 teaspoon vanilla extract (I use Simply Organic Gluten-Free Vanilla Flavoring)


2 cups flour or gluten-free flour blend (I use Bob's Red Mill Gluten Free 1 to 1 Baking Flour)


8 mini candy canes or 4 regular size candy canes, crushed (YumEarth brand dye-free candy canes)



OR use this shortcut...


1 box regular sugar cookie mix instead of vanilla, sugar and flour

***If gluten-free, you can use a brand like Betty Crocker Gluten-Free Sugar Cookie Mix



Instructions:


  1. Cream together butter and sugar.

  2. Stir in flour, vanilla and crushed peppermint candies.

  3. Mix to combine well.

  4. Roll into balls.

*If using packaged cookie mix, cream the butter and add in the cookie mix and peppermint candies, mixing well to combine.


Makes 24 cookie balls

Noreen's Kitchen Oreo Cookie Balls


Ingredients:


1 chocolate fudge cake mix or gluten-free chocolate cake mix (I like King Arthur Gluten-Free Chocolate Cake Mix) prepared according to package directions, (use dairy-free substitutes as needed) and cooled completely.


1 cup homemade buttercream frosting or purchased vanilla or cream cheese frosting (Miss Jones Vanilla Frosting and Cream Cheese Frosting are dairy-free)


1 teaspoon vanilla extract (I use Simply Organic Gluten-Free Vanilla Flavoring)


2 cups crushed Oreo or gluten-free chocolate sandwich cookies (Kinnikinnick Kinnitoos Chocolate Creme Sandwich Cookies are gluten-free and dairy-free)


For Coating


2 cups additional crushed Oreo (or substitute brand) cookies



Instructions:


  1. Combine the frosting and vanilla in a mixing bowl and beat until incorporated.

  2. Crumble cake into mixing bowl and blend until it forms a dough.

  3. Add in 2 cups crushed Oreos (or substitute brand) and blend well.

  4. Roll into individual cookie balls of preferred size

  5. Roll each cookie ball into the crushed Oreos (or substitute brand) to coat completely

  6. Place in refrigerator for at least 1 hour to allow chocolate to set.


Store in an airtight container in the refrigerator for up to 2 weeks. If you are making these in advance, you may also freeze them for up to 3 months.
